福井市にある、地産の旬の食材をいかし、丁寧な仕事で仕上げる和食の名店。繁華街から都市開発が進む駅前エリアへと移転した。入口を入るとまず迎えるのは「前室(まのま)」と名付けられた待合の間。千草石のつくばい、自然石にわずかに手を加えた石彫作家の彫刻ベンチ、クスの無垢材によるクローク扉。石庭にいるような静謐さの中に、大地のエネルギーを感じさせる。客席は導入とは打って変わり、端正なカウンター8席。きめ細やかで味わい深い聚楽壁、間接照明の入ったフローリングの床、ケヤキとヒノキの無垢材のカウンターは料理が存分に映え、料理人と客の距離を心地良く保つ同一レベルで設計した。越前和紙のオリジナル行燈照明が柔らかな光を添え、正面には陶板での竈門(かまど)を設置した。石、木、和紙、土。素材と真っ向から対峙し、自然の理と人の感性、駆使したディティールが息づく、美意識に満ちた空間。繊細な料理と共鳴し食の一期一会を愉しむ、みや崎の第二章が始まった。
Stone, Wood, Washi, Earth, a Dialogue with Materiality
Miyazaki is a renowned Japanese restaurant in Fukui City, known for its focus on seasonal, locally sourced ingredients. Formerly located in a busy entertainment district, the restaurant has relocated to a rapidly developing area near the train station. Upon entering, guests are first welcomed into a space called Ma-no-ma, a tranquil antechamber designed for waiting. Here, a chigusa stone tsukubai or water basin along with a stone bench set the tone in conjunction with cloakroom doors crafted from solid camphor wood. The atmosphere is serene, as if one were in a stone garden, quiet yet filled with the primal energy of the earth. In contrast to the introverted entrance, the main dining area opens into a refined 8 seat counter. The walls are finished with richly textured juraku plaster, while the flooring, softly lit from below, adds warmth. The counter itself is crafted from solid zelkova and cypress wood and is placed at the same level as the chef’s counter to maintain an intimate, comfortable distance between chef and guest. A original Echizen washi paper covered large wall mounted light source gently diffuses light through the space, and at the front, a ceramic panel kamado hearth adds both a focal point and a sense of rootedness. Through harmony between nature’s logic and human sensibility, a space emerges where exquisitely crafted details can breathe. This is a place steeped in aesthetic consciousness, resonating with the restaurant’s delicate cuisine to offer a once in a lifetime dining experience.
